Ingredients:
3 and 1/2 cups water
3 tablespoons vegetable oil*
1/2 teaspoon turmeric
1 tablespoon salt
1/2 teaspoon black or white pepper*
1/2 teaspoon garlic powder*
1/2 teaspoon onion powder*
1/4 cup lemon juice
1/4 a teaspoon of  paprika
1/4 teaspoon of red pepper
1/4 cup vinegar (any kind)
1 bundle of parsley
1 bundle mint
2 medium tomatoes
1 medium cucumber
1 box of couscous 10 Oz.
1 Oz. pine nuts*

Directions:
In a pan, pour the water, the oil, turmeric, salt, pepper, onion, garlic, paprika, red pepper and bring to a boil.

Put the Couscous grain in a bowl or a Pyrex tray spread evenly.

After the broth boiled pour it gently over the Couscous grain and let it sit for a while until it starts rising. Every few minutes, separate the grains with a fork.

Cut the tomatoes and cucumbers to chunks, add the mint and parsley with a minimum of stems throw it all in a food processor, add 2 table spoons of water and the lemon juice and vinegar. Grind all the ingredients (do not liquefy!) Keep it in small chunk.

Add that to the Couscous and stir well until everything gets to a shade of pale green. before the last stirring, add the pine nuts.

Add more salt or hot sauce by taste, Keep chilled and add that to any meal as a side serving, by itself or even on top of a salad.
 



     
The mint can be substituted
with cilantro (my choice)

To give it a nice zest, you can
add a tad of oregano

You can substitute the vegetable
oil with olive oil or sesame oil

Better use white pepper looks pretty

you may substitute garlic and
onion with fresh rather than powder,
shelf  life will be shorter.

Pine nuts can be substituted with
broken cashews or chopped
salted almonds

Add salt and hot pepper by taste.
